Oh my goodness! It's been a while...to say the least. I am, in fact, still alive. :) I've been SO busy LIVING that I have seriously neglected this little blog. Since the last time I posted, we got a new puppy! Her name is Stella Faye, and she is the cutest little thing. Loralei was really jealous at first, but now they are besties in every sense of the word. That makes my heart swell with happiness!
Just look at my sweet little golden babies! :)
In other news, Mr. Wonderful's fraternity brother got hitched in Chicago, so we went on a little weekend trip. :) It was so nice to see familiar faces and get away for a bit! I just LOVE Chi-Town... and being married to my best friend. There's nothing like it!
I presented a workshop on the Author's Craft for our county Literacy In-service Day. I LOVED it, and I had so much fun getting attending other sessions with other teachers from around my area!
Mr. Wonderful and I rented a boat for a day, and we brought my parents (and the pups) along for some lake fun! It was gorgeous! Stella obviously didn't get the memo that she is a golden retriever, and therefore she is a water dog. She was not a big fan of swimming... yet. I hope that changes as she gets a little bigger, because Loralei is obsessed with it, we have so much fun with her in the water.
Other than that, I've been busy working on projects for school next year. You can always check out my teaching blog on the top tab to see what I've been up to there. Who says teachers have their summers off anyway?!
Before I run off to work on a Writer's Workshop resource, I wanted to leave you with one of the easiest, most delicious summer meals! I just had it for breakfast/brunch today, and it totally hit the spot! All you need is an egg, an avocado, cottage cheese, one Roma tomato, and a slice of Ezekiel bread. {I bought my bread at Trader Joe's, but you may check your local grocery store and find it. If you have any health food stores, I might even start there. It's sprouted whole grain wheat grain bread... and it is heavenly... which is fitting since the package has Ezekiel 4:9 right on it. Ha!} Now, seriously, all you do is spread the avocado onto the bread like it's a thick butter, and you fry the egg however you like. Then add salt, pepper, and maybe some garlic powder if you like that kind of thing. I do... :) I cut up the unused portion of the avocado, diced the tomato, added some cottage cheese, and that was it!!! I told you it was easy... and friends... it is delicious! YUMMO! If you're feeling really lazy like I was, you can eat off of a paper plate, and then you have relatively little clean up as well. Does it get any better than that!? Ha! Have a good one!!!!
